In a small saucepan, sauté the onions, green pepper and garlic in the beef broth until golden brown. Add the can of tomatoes and simmer for at least 30 minutes. Mix grits and cheese together and serve with the tomato gravy.

¼ Cup Sweet Bell Peppers, Chopped
¼ Cup Sugar Snap Pea Pods
1/4 Cup Cherry Tomatoes
1/2 English Muffin
1 Ounce Fat Free Parmesan or Mozzarella Cheese
Fresh Basil Leaves
Preheat oven to 375 degrees. In a small bowl whisk together the broth, mustard, lemon pepper seasoning, curry powder and salt; set aside. In a nonstick skillet heat broth over medium heat. Add asparagus spears; cook 1 to 2 minutes until bright green. Remove with tongs; set aside. Add sweet peppers and pea pods; cook 2 minutes. Stir in tomatoes. Cook until tomato skins begin to pop, set aside. Place English muffin in an individual baking dish that has been sprayed with Pam. Top with tomato mixture, asparagus and cheese. Bake for 13 minutes then broil until the cheese is golden brown. Top with fresh basil leaves.

1/2 Cup Potatoes, Peeled and Cubed
2 Tablespoons Vegetable Broth
Pinch Black Mustard Seeds

1 Green Cardamom Pod

1/2 Teaspoon Freshly Grated Ginger

1 Cup Nonfat Cottage Cheese

Cook the potatoes in a pot of boiling salted water, 4-6 minutes until almost tender, drain and set aside. Heat the vegetable broth over medium heat in a non-stick skillet. Add mustard and cumin seeds. Cover and cook until the popping subsides (about 2 minutes). Meanwhile cut the cardamom pod in half and shake out the seeds into a mortar and pestle. Throw the husks away and lightly crush the seeds. Uncover the pot and add onion, ginger and turmeric and cook until soft. Stir in the coriander and cumin; cook, stirring, for 1 minute until fragrant. Stir in the potatoes and simmer over a medium-low heat for 10 minutes, stirring occasionally, until potato is tender. Stir in lemon juice and cook for another 2 minutes. Stir in coriander and pepper flakes. Place on plate, serve with the cottage cheese and garnish with coriander sprigs.

2 Tablespoons Vegetable Stock
1 Cup Fresh Baby Spinach, Chopped

1 Whole Wheat or Corn Tortilla
1 Ounce Fat Free Mexican Cheese
Place stock and spinach in a saucepan and cook on medium high until just wilted; about 2 minutes. Drain very well. Place the salsa in saucepan. Cook on medium until heated through. Stir in the spinach. Spoon a line of the mixture down the center of tortilla, sprinkle with cheese and roll.
